20 Gluten-Free Bread Recipes

Classic Gluten-Free White Bread
Ingredients:
  • 2 cups of rice flour
  • 1 cup of potato starch
  • 1/2 cup of sweet cassava flour
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 1/4 cups of warm water
  • 2 tablespoons of extra virgin olive oil
  • 1 packet of dry yeast (7g)
Preparation:
  1. Mix the flours, potato starch, sweet cassava flour, xanthan gum and salt in a large bowl.
  1. Add the sugar, warm water, olive oil and dry yeast.
  1. Mix everything with a wooden spoon or spatula until you get a homogeneous dough.
  1. Cover the bowl with a damp cloth and let the dough rest in a warm place for about 30 minutes, or until it doubles in size.
  1. Preheat the oven to 400°F.
  1. Transfer the dough to a greased and floured bread pan.
  1. Bake for about 40 minutes, or until golden brown.
  1. Remove from the oven and let cool completely before slicing and serving.
Gluten-Free Whole Wheat Bread with Seeds
Ingredients:
  • 1 ½ cups of whole grain rice flour
  • ½ cup of quinoa flour
  • ½ cup of amaranth flour
  • ½ cup of chia seeds
  • ½ cup of sunflower seeds
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of honey
  • 2 ¼ cups of warm water
  • 2 tablespoons of extra virgin olive oil
  • 1 package of dry yeast (7g)
Preparation: Follow the same steps as the previous recipe, adding the chia and sunflower seeds along with the flours.
Gluten-Free Potato Bread
Ingredients:
  • 2 cups of mashed potatoes
  • 1 cup of rice flour
  • 1/2 cup of potato starch
  • 1/2 cup of sweet cassava flour
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 1/4 cups of warm water
  • 2 tablespoons of extra virgin olive oil
  • 1 package of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, replacing the warm water with mashed potatoes.
Gluten-Free Cassava Bread
Ingredients:
  • 2 cups of sweet cassava flour
  • 1 cup of sour cassava flour
  • 1 teaspoon of salt
  • 1 cup of boiling water
  • 1/2 cup of vegetable oil
  • 2 eggs
Preparation:
  1. Mix the cassava flours and salt in a bowl.
  1. Add the boiling water and stir well with a wooden spoon.
  1. Add the oil and eggs, mixing until you have a homogeneous dough.
  1. Place the dough in a greased and floured pan.
  1. Bake in a preheated 180°C oven for about 30 minutes, or until golden brown.
Gluten-Free Corn Bread
Ingredients:
  • 1 cup corn flour
  • 1 cup rice flour
  • 1/2 cup potato starch
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 1/4 cups warm milk
  • 2 tablespoons vegetable oil
  • 1 package of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, substituting warm milk for warm water.
Gluten-Free Coconut Bread
Ingredients:
  • 2 cups of coconut flour
  • 1/2 cup of rice flour
  • 1/2 cup of potato starch
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 1/4 cups of warm coconut milk
  • 2 tablespoons of coconut oil
  • 1 package of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, substituting the warm water with warm coconut milk and the olive oil with coconut oil.
Gluten-Free Banana Bread
Ingredients:
  • 2 cups of almond flour
  • 1/2 cup of rice flour
  • 1/2 cup of potato starch
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/2 cup of milk
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of baking soda
Preparation:
  1. Mix the flours, potato starch, xanthan gum, salt, and sugar in a bowl.
  1. Add the mashed bananas, eggs, milk, and vegetable oil.
  1. Mix everything with a wooden spoon or spatula until you get a homogeneous dough.
  1. Add the baking soda and mix again.
  1. Place the dough in a greased and floured pan.
  1. Bake in a preheated oven at 180°C for about 40 minutes, or until golden brown.
Gluten-Free Carrot Bread
Ingredients:
  • 2 cups of rice flour
  • 1/2 cup of potato starch
  • 1/2 cup of sweet cassava flour
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 cups of grated carrot
  • 2 eggs
  • 1/2 cup of vegetable oil
  • 1 teaspoon of baking soda
Preparation: Follow the same steps as the banana bread recipe, adding the grated carrot along with the other ingredients.
Gluten-Free Herb Bread
Ingredients:
  • 2 cups of rice flour
  • 1/2 cup of potato starch
  • 1/2 cup of sweet cassava flour
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 1/4 cups of warm water
  • 2 tablespoons of extra virgin olive oil
  • 1 packet of dry yeast (7g)
  • 2 tablespoons of chopped fresh herbs (rosemary, oregano, basil, etc.)
Preparation: Follow the same steps as the white bread recipe, adding the chopped fresh herbs
Gluten-Free Pumpkin Bread with Spices
Ingredients:
  • 2 cups pumpkin puree
  • 1 cup rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 1/4 cups warm water
  • 2 tablespoons extra virgin olive oil
  • 1 package of active dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, adding the pumpkin puree and spices along with the other ingredients.
Gluten-Free Cassava and Coconut Bread
Ingredients:
  • 2 cups cooked and mashed cassava
  • 1 cup coconut flour
  • 1/2 cup potato starch
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon coconut sugar
  • 2 1/4 cups warm coconut milk
  • 2 tablespoons coconut oil
  • 1 packet of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, substituting the warm water with warm coconut milk and the olive oil with coconut oil.
Gluten-Free Cashew Bread
Ingredients:
  • 2 cups of cashew flour
  • 1/2 cup of rice flour
  • 1/2 cup of potato starch
  • 1 tablespoon of xanthan gum
  • 1 teaspoon of salt
  • 1 tablespoon of honey
  • 2 1/4 cups of warm water
  • 2 tablespoons of extra virgin olive oil

Ingredients:
  • 2 cups chickpea flour
  • 1/2 cup rice flour
  • 1/2 cup potato starch

  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 1/4 cups warm water
  • 2 tablespoons extra virgin olive oil
  • 1 packet of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, adding the chickpea flour along with the other ingredients.
Gluten-Free Flaxseed and Chia Bread
Ingredients:
  • 1 cup flaxseed flour
  • 1 cup chia flour
  • 1/2 cup rice flour
  • 1/2 cup potato starch
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 2 1/4 cups warm water
  • 2 tablespoons extra virgin olive oil
  • 1 package of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, adding the flaxseed and chia flours along with the other ingredients.
Gluten-Free Quinoa and Amaranth Bread
Ingredients:
  • 1 cup quinoa flour
  • 1 cup amaranth flour
  • 1/2 cup rice flour
  • 1/2 cup potato starch
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 2 1/4 cups warm water
  • 2 tablespoons extra virgin olive oil

Preparation: Follow the same steps as the white bread recipe, adding the quinoa and amaranth flours along with the other ingredients.
Gluten-Free Sweet Potato Bread with Cinnamon
Ingredients:
  • 2 cups sweet potato puree
  • 1 cup rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 2 1/4 cups warm water
  • 2 tablespoons extra virgin olive oil
  • 1 package of dry yeast (7g)
Preparation: Follow the same steps as the white bread recipe, adding the sweet potato puree and cinnamon along with the other ingredients.
Gluten-Free Fine Herb and Garlic Bread
Ingredients:
  • 2 cups rice flour
  • 1/2 cup potato starch
  • 1/2 cup tapioca flour
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 1/4 cups warm water
  • 2 tablespoons extra virgin olive oil
  • 1 packet of dry yeast (7g)
  • 2 tablespoons chopped fine herbs (rosemary, oregano, basil, parsley, etc.)
  • 2 cloves of garlic, minced
Preparation: Follow the same steps as the white bread recipe, adding the chopped herbs and garlic along with the other ingredients.
Gluten-Free Pão de Queijo with Tapioca
Ingredients:
  • 1 cup of tapioca
  • 1 cup of grated Parmesan cheese
  • 1/2 cup of sweet cassava flour
  • 1/2 cup of sour cassava flour
  • 1 egg
  • 1/2 cup of milk
  • 1/4 cup of vegetable oil
  • Salt to taste
Preparation:
  1. Mix the tapioca, Parmesan cheese, sweet cassava flour, sour cassava flour, and salt in a bowl.
  1. Add the egg, milk, and vegetable oil, mixing until you obtain a homogeneous dough.
  1. Place the dough in greased and floured molds.
  1. Bake in a preheated oven at 180°C for about 20 minutes, or until golden brown.
Gluten-Free Chocolate and Walnut Bread
Ingredients:
  • 2 cups almond flour
  • 1/2 cup rice flour
  • 1/2 cup potato starch
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1 tablespoon coconut sugar
  • 1/2 cup cocoa powder
  • 1/2 cup chopped walnuts
